Spicy Stew

Add the duck claws you bought to the cooking wine, a small amount of pepper, and green onions in a pot under cold water. When the water boils, remove them and put them in the beer 🍺. This step is to remove the fishy smell and make the claws stronger.

Then mix the marinade according to the proportions on the recipe, add light soy sauce, dark soy sauce, sugar and dried chili, if you feel that the beer is not enough, you can add a little more beer 🍺, you can add a little water if you don’t, and it will spread over all the ingredients.
Put it in a pot and bring it to a boil. My material bag was wrapped in gauze at first, so the taste might be a little lighter. If you like a stronger flavor, you can put it in without gauze.
After the high heat is boiled, turn to low heat and simmer for about 40 minutes.

When the halfway time is almost the same, you can add the side dishes you want to eat. I added lotus root and kelp. The lotus root I bought is noodle lotus root, and it tastes exactly the same when cooked.
Note here that the cooking time of the claws should not be too long. I just cooked it for almost an hour, and the claws tasted a bit soft and not strong enough. I estimate that forty minutes is the most appropriate time, and it should not exceed fifty minutes at most.
