Spicy Trotter

Cut the trotter into small pieces, put it in a pot under cold water, add sliced ginger and cooking wine.

Boil the bleeding foam on high fire, remove and wash for later use.

Put oil in the pot, stir fry the onion, ginger and garlic until fragrant.

Add Chinese pepper, star anise, cinnamon, bay leaves, dried chili and sauté until fragrant.

Pour in Pixian bean paste and stir-fry with red oil.

Pour in the trotters and stir fry slightly.

Then add light soy sauce, dark soy sauce, oyster sauce, chili powder and stir-fry evenly.

Pour in beer, surpass the trotters, bring to a boil on high heat, turn to low heat and simmer for 1 hour.

Boil until soft and turn to high heat to collect the dried soup and sprinkle some chopped green onions.
