Spicy Trotters

Buy a pig's trotter, pluck it, wash it, and cut the ginger.

Boil a pot of water, add trotters and small yellow ginger, add a little cooking wine, cook for 6-7 minutes, wait for the froth to come out completely, pick up and wash.

Add a small amount of oil to the iron pan. After the oil is boiled, put the rock sugar in the wok. Be sure to fry the sugar color on a low fire. When the sugar is all over, add the trotters and fry slowly until the trotters are golden. Add salt, dried chili, grass fruit, light soy sauce, star anise, continue to fry for a while, and then turn the ingredients into a small casserole.

Add water until the trotters are just under, bring to a boil on high heat, turn to low heat and simmer slowly.

After simmering for about an hour and a half, collect the juice on the fire, start the pot, and start eating! (During the braising process, you can open the lid and poke the trotters with chopsticks. The softness and the hardness are up to your preference)
