Spicy Trotters

Wash the pig's knuckles. (When buying pig's knuckles, it is best to let the boss chop a little bit, so that it is easy to cook and taste). Boil it in boiling water to remove the foam.

The pig's feet are taken out and rinsed with cold water, and the water is controlled for use.

Appropriate amount of ginger slices, a few peppers, appropriate amount of bay leaves, 2 grass fruits, 3 star anises

Pour oil in the pan, when it is 50% hot, add rock sugar, low heat, and fry slowly until it is completely melted

Pour in the trotters and stir fry until they are colored, turn the trotters to one side, and use the remaining oil in the pan to fry the ingredients to create a fragrance

Mix the trotters with the aniseed and stir fry a few times. Add water to the trotters.
