Spinach Ham Pancakes

Pancake part: Sift the flour into the basin, add milk and salt, and stir evenly with a whisk. Let stand for 15 minutes.

Spinach filling part: In the meantime, cut the onion into fine dices and the green onions into rings. Take out the ham and set aside. Wash spinach, dry and chop.
Take an appropriate amount of butter and melt it in a pot. Saute the scallions and onions until fragrant. Add chopped spinach and stir fry.

Add two scoops of curd or cooking cream. If you like cream, you can add more according to taste. If neither of these is available, you can use milk instead, just give more.

Cut the Gouda cheese into small strips or pieces and melt into the spinach. Season with salt, pepper and ground nutmeg. Turn off the heat, keep the spinach stuffing warm, and set aside.

Pancake part: Beat the eggs into the batter and mix well.
Take a suitable non-stick pan, put a small amount of oil in the pan, and heat it up. Pour 1/3 of the batter, turn to low heat, and spread into a cake.
When the edge of the pie starts to turn up, you can turn it over. Fry on the other side for almost the same time.

The fried pancakes are served on a plate. Spread 1/3 of the spinach filling on 1/2 area of the pancake. Spread ham on top. Place 1/2 of the unfilled on top of the filled. Sprinkle some thyme at the end.
Tips:
1. Today I spread the spinach filling on half of the pancake, so there are a lot of fillings. If you are rolling up pancakes, you only need about half of the filling.
2. This dish was originally intended to be made into three pancake rolls, put in a mold, sprinkled with cheese, and baked. So in picture 12, the other half of the merger also has spinach on it, because I have rolled it.
