Spinach Rolls with Ginger Sauce

Prepared spinach and ginger.

Cut the ginger into minced pieces, soak the spinach in light salt water for 20 minutes, and rinse with water.

Mix well with ginger-flavored juice made from ground ginger, salt, sugar, light soy sauce, vinegar and sesame oil, and set aside.

Bring the water to a boil and add the spinach until it is broken.

Remove the draining water and put it in a basin.

Pour in ginger juice and mix well.

Wrap the spinach leaves one by one from the inside to the outside along the rhizome and place them in a plate.
Tips:
Spinach has a higher oxalic acid content, so it is advisable to boil the vegetable water first to reduce the oxalic acid content. Don't eat too much at one time.
Choose spinach with tender leaves, and retain the spinach root.
