Spinach with Yuba

Root spinach, wash and set aside

Soak the yuba in cold water for 5 hours, then cut into sections.

Bring the water in the pot to a boil, put the yuba to blanch (note: the time should not be too long, 5 seconds is enough), remove, super cool water, drain for later

Put a few drops of oil in the pot, continue to boil, put the spinach, remove it after turning green, and super cool water.

Drain the spinach and cut into small sections.

Mince ginger and garlic.

Add spinach and yuba with minced ginger and garlic, add appropriate amount of salt, monosodium glutamate, sugar, and a small amount of sesame oil
8.
Griddle with cold oil, add appropriate amount of peppercorns, over medium heat, turn off the heat when the side of the pot smokes. Pour the pepper oil on top of the minced ginger and garlic while it is hot, stir evenly, and serve.
