Spring Bamboo Tofu Soup

Take out the lactone tofu and cut into small pieces. Wash the toon seedlings and drain.

Soak in light salt water for 5 minutes.

Slice the spring bamboo shoots, blanch them in a pot of boiling water for 3-5 minutes, remove them, remove the oxalic acid, and remove the astringency.

Add broth, spring bamboo shoots, and tofu in the pot and bring to a boil.

Turn to low heat, add salt and goji berries, simmer for 5 minutes.
