Spring Rolls

After washing the shepherd's purse, blanch it in boiling water for 30 seconds and immediately remove it and put it in cold water.

Then squeeze the water from the shepherd's purse, and chop the shepherd's purse into the end.

Add 1 tablespoon of salt, 1 tablespoon of oil, 1 tablespoon of abalone juice, a little bit of minced ginger, and 1 egg white to the minced meat and mix well.

Mix the minced meat and shepherd's purse, add a spoonful of sesame oil and stir well.

1 Whole sheet of oily bean curd is cut into small rectangular pieces for later use.

Put the minced meat in the middle of the oily bean curd, roll up both ends

Roll up from one side.

Finally rolled into a spring roll.

Beat an egg to stir up the egg liquid. Use a small brush to apply egg wash to the joints of the spring rolls to stick them. If you don’t brush the egg mixture, the spring roll wrappers will open when they are fried in the pan.

When the oil is heated for 6-7 in the pot, add the spring rolls and fry them until golden brown.
