Staple Food: Hanamaki

1. Take the noodles ⇨ add yeast and sugar to mix evenly ⇨ prepare warm water to sprinkle on the back of your hands to make the water flow evenly on the white surface, so as to make the dough better (as shown in the picture).

2. Cover the kneaded noodles and start to make it. Ps:) Rising time depends on the surrounding temperature. Usually, in winter, it is about 3-4 hours; in summer, it is about 2-2.5 hours.

3. Add soda (a little bit) to make the dough more fluffy and soft.

4. Flatten in half and add oil and salt.

5. Sprinkle some pudou (from hometown, it is more flavorful. If not, you can leave it alone).

6. Roll the noodles as shown, and cut them to fit the size.

Tips:

After the water is boiled, steam for about 15 minutes and it will be OK.
