Steamed Blue Crab with Eight Treasure Rice

To prepare the ingredients, soak the glutinous rice in water 2~3 hours in advance, dice carrots, mince celery, dice sausages, cut green onions, soak dried shrimps, mushrooms and scallops, then mince scallops and press them into thick strips.

Soak the washed glutinous rice and steam it in a pot on high heat for 20 minutes. Add a little water and a little oil to the glutinous rice.

Add oil to the pan and saute the shallot leaves on low heat.

Sauté the green onion leaves, then add the carrots, sausages, shiitake mushrooms, chopped dried shrimps, and scallops to fragrant.

After the blue crab is cleaned, open the crab cover and insert the crab into the crab's heart and stop moving.

After the crab is killed, remove the crab sieve, crab navel, crab stomach, and crab mouth and soak in water for about 15 minutes.

The glutinous rice is also steamed.

Add salt, chicken powder, pepper, sugar, minced celery and sauteing ingredients to the steamed glutinous rice, mix well without turning on the fire.

The well-mixed eight-treasure rice is spread on the bottom of the plate first.

Cut the blue crab into pieces and sprinkle with a little salt.

Put the crab on top of the eight-treasure rice and top with green onions and ginger slices.

After the water is boiled, steam it in a pot.

Steam on high heat for 7 minutes and 30 seconds, because the shelled blue crab is not full of meat, don’t steam it too much.

Steamed to remove the ginger and green onions, and then drizzle with hot oil.

Tips:
①After the crab is killed, it must be soaked in water to remove the unpleasant smell.
②Since the blue crab is not full of meat, don't steam it for too long. The steaming time is shorter than the cream crab.
③Steamed glutinous rice has distinct grains. Steaming with blue crabs will absorb the crab soup and make it more delicious.
