Steamed Loach

Pour the live loach into the pot, sprinkle a handful of salt and quickly cover the pot.

After 15 minutes, the loach is almost dead, pour it into the wash basin, cut it with scissors to clean the belly, and then cut it into sections.

Add scallions, ginger, salt, and beer to marinate for more than 20 minutes.
4.
Rinse and steam until cooked (about 15 minutes).
5.
Sprinkle the pepper, chopped green onion, drizzle with boiling oil and you're done.
