Steamed Loach

Buy the loach and raise it for two days first, let it spit out the dirt in its stomach, and change the water twice during the period;

Before steaming, boil an appropriate amount of boiling water, put ginger and shallot wine in the water to remove the fishy; after the water is boiled, pour the loach, and immediately cover the lid to avoid splashing splashes, and blanch it for about 10 seconds;

Tips:
