Steamed Sea Bass

Clean the sea bass, put a few knives on both sides, stuffed ginger slices in the belly, scallion. Add cooking wine, lemon juice, and salt. Let stand for about 15 minutes.

Cut the chives into sections, shred the scallion tails and soak in water, slice a section of ginger, and shred half. Shred the ham.

Spread the ginger slices and scallion on the bottom of the pan.

Place the marinated sea bass and some ginger on the fish. After boiling the steamer, go up and steam for about 12 minutes. The specific time depends on the size of the fish.

Take a wok, add a few peppers and lard. boil. Out of fragrance.

Pour out the water inside the steamed fish, remove the shredded ginger, take a bowl, add steamed fish soy sauce, oyster sauce, add appropriate amount of cooked lard, stir well, and pour it on the fish.

Place shredded ham, sprinkle chopped green onion, and garnish with a few goji berries. Finally, top with the burnt pepper lard.
Tips:
For the steamed fish, add shredded ham and top with hot pepper lard. The fat penetrates into the fish and makes the fish more delicious.
