Remove the scales of the fish, cut off the head and tail (the head is reserved for use), and cut off the fins. Then take out the internal organs of the fish maw from the incision on the head, wash and drain. When buying fish, you can ask the store to scrape the scales. Starting from the head, use a knife to cut from the back of the fish to the belly, but don’t cut the belly, don’t make it too thick, cut it all the way to the tail, and smear the front and back Fine salt, add ginger slices at the incision, pour cooking wine, white pepper, and simply massage the fish.

Marinate for 20 minutes after massage. Most of the marinated fishy smell is removed! It's also a bit tasty.

Put enough water in the steaming pot, put the meat in the pot, and put the fish directly on it, so that the excess soup is filtered out during the steaming process. This step is very important.
