Steamed Shrimp with Garlic Vermicelli

Soak the vermicelli with water to soften.

Shrimp head to shrimp line.

Cut the shrimp along the back.

Use a knife to cut the shrimp lengthwise in the direction shown in the figure, and do not cut the shrimp. (This is to prevent the shrimp from twisting after being steamed)

Cut the soaked vermicelli into two pieces and spread them on the plate.

Put the cut shrimp in shape.

Mince garlic, green pepper and red pepper.

Put oil in the pot and heat to 60% heat. Fry the lower half of the minced garlic until golden brown. Turn off the heat and add the other half of the minced garlic. Use the remaining heat to sauté.

Add a pint of fresh soy sauce and appropriate amount of water to the minced garlic. If the saltiness is not enough, add salt.

Tips:
I like to make this dish by splitting the shrimp, so that the aroma of garlic can be better integrated into the shrimp, and the vermicelli can absorb more of the shrimp soup.
