Steamed Taro with Chopped Pepper Ribs
1.
Chop ribs into small pieces, wash and drain.
2.
Add cooking wine, soy sauce, a little sugar, pepper, and sesame oil. Grab evenly. Grab a little longer to let the ribs taste. Then add half of the egg white and continue to stir well. Finally, add a little starch to stir evenly and let it marinate in the refrigerator for at least 30 minutes.
3.
Peel the taro, wash and cut into small pieces.
4.
Chop green onion and ginger into small pieces.
5.
Take out the marinated ribs and add chopped peppers, increase or decrease the amount according to taste. Note that chopped pepper is salty, so the proportion of salt should be increased or decreased accordingly. Add oyster sauce and mix well.
6.
Finally, pour the ginger spring onion and taro, mix well, put it in a bowl and steam it in a pressure cooker. I use an electric pressure cooker and turn it to the ribs. If it is an ordinary pressure cooker, it will be fine for 20 minutes.
7.
Garnish with coriander at the end. That's it!
Tips:
The ribs should be marinated with sufficient flavor, otherwise they won’t taste any more. The taro can also be replaced with potatoes, pumpkin, lotus root, etc. Let your imagination run wild!
