Stewed Beef Brisket with Tomato and Potato

Wash and drain the sirloin meat, cut into 2~3 cm squares. Wash the tomatoes (about 400 grams) and blanch them in boiling water, peel off the epidermis, remove the stalks, and cut into 3~5 cm cubes. Peel the potatoes (about 150 grams), cut into small pieces, and soak them in water to prevent oxidation. Onion (about 150 grams) peel off the skin and cut into small pieces.

Put the sirloin meat in a boiling pot, add enough cold water, and transfer to a high fire. After boiling, continue to blanch for 5 to 8 minutes. Pour out the soup, remove the sirloin pieces, and wash away impurities with hot running water.

Heat the oil in the wok over high heat, add the chive knot (or 1 green onion, cut into large pieces), sliced ginger and onion and stir fry to get a fragrant aroma.

Sprinkle white pepper before serving, boil on high heat for 2 minutes, until the meat is rotten and the juice is thick. It can be garnished with chives or coriander, green garlic and so on.
Tips:
1. The function of boiling beef in a cold water pot is to remove blood water and impurities. Because the water temperature and the temperature of the beef are together from cold to hot, the beef will not become tight due to the sudden change in temperature, which will affect the taste. Then rinse the beef again with hot running water, the same goes for.
2. The rock sugar is added to neutralize the acidity of tomatoes, and it can also improve freshness.
3. This dish can also be cooked in a pressure cooker, which saves time: first cook the sirloin broth. After the steam is released, press it on a medium heat for 20 minutes.
