It feels like I haven’t eaten eggplants for a long time, so I went to the market and bought one. But my husband didn’t come back to eat for a few days, and I didn’t eat it myself in the refrigerator. I added two ham sausages, because babies like to eat too, so it tastes good, carrots can be more nutritious, and both babies and adults will eat it well.

Stewed Eggplant with Carrots

1. Peel the eggplant and cut into thin slices.

2. Slice carrots, slice ham, and mince garlic.

3. Heat oil in a pot and sauté the garlic.

4. Put the carrots and stir fry.

5. Add the ham and stir fry.

6. Pour the eggplant and stir fry.

7. Add a spoonful of Zhu Hou sauce and a little water and simmer until the eggplant is cooked through.

8. Add the chopped green onion and cut raw.

Tips:

Zhu Hou sauce is relatively salty, so I didn't add any more salt.
