Stewed Fish Head with Tianma

1. Prepare the required ingredients (wash the red dates and wolfberry, cut the green onion into small pieces, slice the ginger, and cut a little coriander for later)

2. Clean the head of silver carp, drain the water for later use

3. Gastrodia (recent photo)

4. Soak the gastrodia in water and cut into thick slices for later use (the slices you bought do not need to be soaked in water, just wash them clean)

5. Pour in a proper amount of cooking oil from the pan to heat, add the fish head and fry until golden on both sides

6. After frying, transfer to a casserole, add gastrodia elata, spring onion, sliced ginger, cooking wine, red dates, wolfberry, pour in some hot water to cover the fish head (you can add more), bring to a boil, turn to low heat and simmer for 30- 40 minutes

7. The stewed fish soup becomes milky white, add a little salt to taste and sprinkle some coriander.
