Stewed Hen with Boletus and Winter Bamboo Shoots

Get ready for a hen

Prepare winter bamboo shoots and porcini mushrooms

Shell the winter bamboo shoots, wash and slice them for later use.

Soak the boletus in clean water, rinse and set aside.

Remove impurities from the hen, wash it, and blanch it in boiling water for 5 minutes.

Take the pressure cooker, put in the hen, add 80% water, add ginger, green onion, cooking wine, bring to a boil on high heat, low heat for 20 minutes. Turn off the heat.

Tips:
1. If it’s a normal chicken, you don’t need to put it in a pressure cooker and stew it directly in a casserole. My hen, which is 2 years old, takes a long time, so I cook it in a pressure cooker first, and then stew it in a casserole. You can save some time.
2. If the hen has a lot of oil, you don't need to remove it, stew it together, and skim it when you eat it. The chicken broth simmered in this way is more fragrant.
