Stewed Pigeon Soup
1.
1. A group photo of the ingredients: prepare the above ingredients-pigeon/ginger/chives/red dates/medlar
2.
2. First, clean the pigeons you bought back for later use.
3.
3. After cleaning, put 3 slices of ginger and some cooking wine into the pot and boil it under cold water. Boil until the water boils and boil it for about a minute to fish it out (the purpose of blanching is to remove the blood, so it will be clean and healthy. )
4.
4. After blanching the water, pick it up and rinse the foam with cold water to cool it down for later use
5.
5. Prepare the casserole and put the blanched pigeons and ginger slices in turn, and then add 1200ml of water (if you prefer to drink soup, you can add 1-2 bowls of water because the water will evaporate during the soup. Part of the water must be drawn. It’s better not to add water, or the soup will not taste good. There is no soul. My casserole is about two bowls of about 1600ml for reference.) If you have 2-3 green onions at home, you can also tie knots at this time. Putting it in the pot and simmering together will also help to remove the fishy and fragrant. I don’t have a whole onion at home, so I omitted this step...

6. Close the lid and boil on the gas stove (please refer to the picture for the firepower)
7.
7. Just like this, when the fire is boiled, you can turn on a low fire and simmer slowly
8.
8. After the high heat is boiled, turn to low heat and simmer slowly for 1.5-2 hours. It is best to stir it every 20-30 minutes to avoid sticking the pot... I am the minimum fire (see the picture for the firepower)
9.
9. At this time, soak the washed red dates and wolfberry for about 20 minutes.
10.
10. After simmering for about 1.5 hours, put the prepared red dates and goji berries and simmer for about 15 minutes after closing the lid. Finally, add a small spoon of salt and a small half spoon of chicken essence, stir evenly and sprinkle with the prepared chives to make it delicious. Alright (it’s difficult to adjust the specific amount of salt and chicken essence according to personal taste!)

11. Finished picture-the clear soup version I made is very light and non-greasy. It tastes very delicious! (Just two small bowls of soup are not enough 😭)

eat! 😋
Tips:
1. When stewing, the water should be added at once. Do not add water during the stewing process, otherwise the soup will not taste good
2. The recipe steps are very detailed. Kitchen novices can easily make a delicious and nutritious clear soup
3. This recipe can also stew chicken/spare ribs... If the steps are the same, add 1-2 bowls of water according to the volume of the chicken/spare ribs you stew. The stewed soup is as delicious
