Stewed Pork Stick Bone

Chop the pig bones into small pieces, clean them and soak them in water for 1 hour to remove the blood, and change the water several times in between. The soaked pork stick bones are boiled in a pot under cold water, and the foam is removed. Cook for about 10 minutes until the blood foam is removed. During the blanching process, add a proper amount of water to the boiling pot and heat it up.

The blanched pork bones are rinsed again with warm water to remove impurities and put into the boiling pot

Add the chopped green onions, ginger slices, star anise, bay leaves, dried fennel stems, cooking wine and white vinegar, cover the pot and simmer for 1 hour

Skim the oil a few times during the stewing so that the soup will not be too oily.

After 1 hour, add some salt to taste

Continue to simmer for about 30 minutes, and the soup will turn white, then turn off the heat and get out of the pot.
