Stewed Pork Trotters with Tomato and Soybeans
1.
Prepare ingredients.
2.
Soak the soybeans in advance. My soybeans were not weighed, and I grabbed about three handfuls. Soybeans should be picked out of bad beans and then soaked.
3.
Chop the trotters into small pieces, soak the bleeding water in cold water, and change the water several times.
4.
Put the cold water of the trotters into the pot, add three slices of ginger, three slices of bay leaves, about ten slices of Chinese pepper, and a short section of cinnamon to cook.
5.
After the water boils, there will be foam in the pot, which is the blood foam boiled from the trotters. Use a spoon to carefully remove it until the soup is clear.
6.
Add the soaked soybeans and boil on high heat, then turn to low heat and simmer. If you have plenty of time, you can let it simmer slowly. If you don’t have time, then pour them into a pressure cooker and cook.
7.
Wait until the pig's feet are soft and rotten, and the soybeans are crushed under light pressure, and the soup is thick and white, and then we can prepare the tomatoes.
8.
Peel the tomatoes and cut them into small cubes. Use a food processor to beat them into juice.
9.
Pour the beaten tomato juice into the pot and stir constantly.
10.
You can add some tomato sauce, soy sauce, and salt to taste according to your taste. Pay attention to not too much soy sauce, it will affect the taste. Until the soup is collected to the state you like.
