Stir-fried Bacon with Dried Radish
1.
Soak the dried radishes in water for half an hour, then wash and cut.
Cut the washed bacon into thin slices, wash and cut the garlic sprouts, chop the dried red pepper, and set aside for later use.
2.
Pour the cut bacon into a pot with boiling water and cook for three or two minutes (you can smell the aroma). This step is to put the bacon in the water and cook it thoroughly. The nitrite will dissolve in the water. , We eat more safely. Secondly, it must be boiled in a pot under cold water. Only in this way can the water slowly penetrate into the meat tissues, so that the originally shriveled bacon sausage becomes more moisturized. If you steam it in a pot first, you can't achieve this effect. If you cook it in a pot under boiling water, the surface protein of the meat will shrink sharply by heat, which will affect the penetration of water. At the same time, it is difficult for nitrite to fully exude.
3.
Pick up the cooked bacon and drain it for later use.
If the dried radish has moisture, you can heat up the pan first and then boil the moisture to set aside (it can be omitted if the moisture is drained)
Put the pot on the fire, add oil and heat, then pour the fat bacon on medium-low heat and fry until fragrant. Then turn to high heat and pour in the other bacon and stir fry together with a little soy sauce. No need to add too much salty). Then add dried chili and garlic sprouts and stir fry until fragrant.
Tips:
1. The time required for water passing and steaming should be flexibly controlled according to the size of the bacon.
2. Cut the bacon into thin slices and then stir-fry the bacon in small and medium-sized pieces.
