Stir-fried Bacon with Sword Beans
1.
Boil water in a boiling pot, add a little salt and oil, put the beans in it and blanch them until they are six or seven mature;

Cut the blanched beans into small pieces and prepare other raw materials;

Put the bacon in the pot, add a little oil and a small bowl of water;
4.
Cover the lid and simmer the bacon for two minutes, then open the lid and stir-fry the bacon;
5.
After the bacon is slightly oily and the fat is transparent, put the garlic slices and red pepper in it and stir fry;
6.
Stir fry until the aroma is released, add sliced carrots and stir fry;
7.
After the red oil comes out slightly, add the blanched beans and continue to stir fry;
8.
Add salt before stir-frying and stir-fry evenly;
9.
Lift the pot and serve it on the plate.
Tips:
1. Canavalia beans are not easy to be cooked, and unripe canavalia are poisoned after being eaten, so blanch them in advance until they are six or seven mature before frying;
2. As the bacon has not been steamed in advance, so add a small bowl of water and a small amount of oil before stir-frying, cover and simmer for two minutes, then stir-fry part of the fat, it will taste fragrant but not greasy;
3. Add red pepper and garlic slices and stir-fry to get the aroma, then add the carrots and stir-fry. Carrots are fat-soluble, and only after oil-stir-fried can it be beneficial to nutrition absorption.
