Stir-fried Chicken with Broccoli
1.
Ingredients: half of fresh three yellow chicken (about 600 grams), 300 grams of broccoli. Accessories: vegetable oil, salt, 5 grams of soy sauce, 1 star anise, 10 peppercorns, 10 grams of ginger, 5 green and red peppers
2.
Wash the chicken to remove the bones, then cut it into small pieces
3.
Wash the broccoli and break it into blossoms, wash and cut the ginger slices and green and red peppers (optional)
4.
Heat the pan with cool oil, heat 70% of the oil and add the chicken nuggets, and fry until golden brown inside, fragrant and moisture (you can also blanch the water first, then fry)
5.
Add dark soy sauce and stir fry to evenly color, you can also add some light soy sauce, for spicy ones, add bean paste and stir fry to get the flavor
6.
Add dark soy sauce and stir fry to evenly color, or add some light soy sauce. For spicy ones, add bean paste and stir fry to bring out the fragrance. Heat water and stir fry evenly and boil over high heat. Don't add too much water. Cover the chicken. 3 One-third is good. Turn to medium and low heat. Add a lid and simmer for more than 15 minutes. The chicken has skin on it, so it will take longer to simmer.
7.
Add broccoli (optionally blanched in advance) and stir-fry evenly. I like to fry it by myself to get the fragrance, not blanching
8.
Add green and red peppers and stir fry for a spicy taste
9.
Add salt and stir fry evenly
10.
Stir fry again until the chicken is well cooked and the broccoli is tasty, stir evenly and it will be out
Tips:
1. It is best to fry the chicken in advance to get the moisture and flavor, and then fry together with spices, and add water after the chicken is colored, so that the color and color effect is good
2. Do not blanch broccoli in water, it will absorb the taste of chicken easily, and the fry will taste better
