Stir-fried Chives with Egg Tofu Skin

Prepare the ingredients.

Cut the leek into sections, cut the tofu skin into 0.5cm-wide strips, and beat the eggs with a little salt.

Add the shredded tofu into the beaten egg mixture and mix well.

Add salad oil in a hot pan, heat to 80% heat, add tofu preserved egg liquid, spread slowly, and stir-fry slowly with chopsticks for 2 minutes.

Add the leeks.

Add appropriate amount of refined salt.

Add the right amount of oyster sauce and stir-fry evenly.

Bring out of the pan and serve on the plate.
Tips:
The amount of refined salt and oyster sauce is adjusted according to your own taste, and refined salt is added to the egg liquid, so you should add less when it comes out of the pot.
