Stir-fried Chives with Octopus

Prepare the ingredients.

Clean up the octopus (the stall owner will usually help kill it, but it is best to tear off the gray skin on the surface and remove the ink from the eyeballs).

Blanch the cleaned octopus in water. Don't cook it for a long time. You can pick it up as soon as the water is poured in.

Clean the leek and cut into sections, shred the ginger, and smash the garlic for use.

Heat oil in a pan, add ginger and garlic to sauté.

Add the octopus and stir fry for a few minutes, and drizzle with a few drops of rice wine.

Then add the leeks.

Continue to stir fry until the leeks are soft.

Finally, add in the right amount of salt, soy sauce and soy sauce to taste, then turn off the heat.
Tips:
1. Do not blanch the octopus for a long time. You can pick it up as soon as the water is poured in to avoid losing the flavor.
2. Put the leeks at the end, don't need to fry for too long, fry them until they are broken
