Fujian Dried Rice

Prepare the required materials. Wash the oysters and the rice separately, and cut the mushrooms, carrots, and cabbage (you can also chop them while the rice is braised). Cut the octopus feet into small sections, cut the lean meat into small filaments, rush the seaweed a little bit and cut it with scissors, soak the scallops in warm water and then tear them up.

Marinate the lean meat and sea oysters for 5-10 minutes to taste. The lean meat is marinated with a little salt, light soy sauce and oyster sauce. Sea oysters have a salty taste, so add a little oyster sauce and old wine (cooking wine) to marinate.

Add the scallion, ginger, garlic, etc. in a hot pot to stir up the aroma. Then add sea oysters and stir fry~

Then put in the octopus feet

Put in the drained rice

Add a pinch of salt and oyster sauce. After all, it's rice and a staple food, so these salt is enough.

Put in the sour bamboo shoots (the hometown dialect of "greasy bamboo shoots"), a specialty of Fujian, and it will do just a little bit.

Take out the inner pan of the rice cooker, put the fried porridge into it, add an appropriate amount of water, the ratio of water to rice is 1:1 (the amount of water is very important, it must be one to one, success or failure depends on it) Stir evenly.

Just cook as usual. Stir well after it's cooked and set aside. (Lazy people can directly add the chopped cabbage during frying, and then simmer it together. Sprinkle with chopped green onion and chopped celery and eat it. The taste is excellent, but I don’t like to eat soft cabbage , So I have the following process of frying cabbage. It's all because of personal preference~~)

Put a little oil in the pot, add the cabbage and stir fry, add a little salt and fry until soft.

Add the braised rice and continue to stir fry.

Sprinkle with chopped green onion and chopped celery, stir-fry for a while, and you'll be ready to cook. It's so delicious~! !
Tips:
1. This dish of dried rice is actually seafood braised rice. If there is fresh shrimp, it tastes better. Because I am in Hunan, seafood is limited, and the sea oysters are frozen by my mother-in-law, so let me eat it and cherish it. Right~~
2. The amount of salt is also very important. If it's too salty, you won't be able to eat it. Don't add too much. After all, it's rice. You can also imagine fried rice, and then put the right amount of salt.
3. The ratio of water to rice must be 1:1.
