Stir-fried Clams

Wash clams and spit in the sand.

Shred ginger slices, mince sour, and mince spring onions.

The frying pan is heated with blue smoke, pour the oil into the ginger and dried chili. Stir fry (if you like a bit more spicy, you can cut the dried chili into sections)

Pour in the clams and stir fry, add half a spoon of sugar, slightly open the mouth of the clams, add minced garlic, pour in cooking wine, a few drops of vinegar, pour in oyster sauce and stir fry.
