Stir-fried Cowpea with Shredded Beef

Shred beef tenderloin, it is better to cut after freezing.

Shred the beef and wash it with water, drain the water, add pepper, light soy sauce, and starch to mix well.

Add some vegetable oil to mix well and marinate for ten minutes.

Wash cowpea and cut into small sections.

Place the water in a pot to boil, add some salt, add the cowpeas, and blanch for about 2 minutes.

The blanched cowpea can maintain its emerald green color if it is too cold water.

Peel and shred carrots, chop green onion and ginger.

Heat the pot, the oil is slightly hot nowadays marinated beef shreds.

Stir-fry until the shredded pork changes color and serve.

Fill the pot with oil and heat again, add green onion, ginger, and carrots.

Stir fry a few times.

Add the cowpeas and stir fry for a minute or two.

Pour in the fried shredded beef and stir-fry evenly.

Add light soy sauce and stir well.
15.
Season with salt.
16.
Stir-fry well.
