Stir-fried Enoki Mushroom with Spinach

Wash the spinach well.

Put water in the pot, add the spinach to boil and blanch for two to three minutes until the spinach becomes soft. Remove oxalic acid.

Cut the blanched spinach into sections for later use.

The enoki mushrooms are also blanched, and remove them for use.

Put oil in the pot, add the peppercorns in the oil and stir fragrant. Strain the pepper, leaving only the pepper oil.

Continue to fire, add the chopped green onion and ginger after the pepper oil is hot.

Pour in spinach and enoki mushrooms, stir fry, add salt and light soy sauce, and stir-fry well.
