Grey tofu fruit, known as "ginseng fruit", is also called "fairy fruit". Produced in the hometown of Yinshan in China-Daozhen Gelao and Miao Autonomous County, it is a special flavor food passed down from generation to generation by the Daozhen Gelao people. Using high-quality soybeans as raw materials, the traditional stone milling process, supplemented by high-quality pollution-free plant ash, is finely processed. Stir-fried ash tofu is actually very simple. As with other dishes, I used red pepper to fry ash tofu in order to look better. Technology needs to be improved.

Stir-fried Grey Tofu with Red Pepper

1. Dried gray tofu fruit, about 5

2. Seal and soak in rice soup or rice water or 30 degrees Celsius warm water for about 1-2 hours (until softened)

3. Just wash the ash with clean water

4. Cut the washed gray tofu into silk or small pieces, set aside

5. One red pepper, shredded and set aside

6. Heat up the pot, add rapeseed oil, cook about 80 degrees Celsius, add ginger and garlic, sauté fragrant, then add grey tofu shreds and red pepper, stir fry a few times.
