Stir-fried Minced Pork with Water Spinach

1. Pluck the leaves of water spinach, wash the stems and drain the water.

2. Cut the foreleg meat into small cubes, add some pepper, light soy sauce, and peanut oil and chop into minced meat.

3. Mince garlic and red pepper separately.

4. Cut water spinach stalks into small pieces of about 1 cm.

5. Heat oil in a pot, add minced meat and stir fry until fragrant.

6. Add minced garlic and sauté until fragrant.

7. Add water spinach stalks and stir-fry the red pepper over high heat.

8. Add a pinch of salt and chicken essence.

Tips:

1. Add some pepper and peanut oil when chopping minced meat to increase the flavor and tenderness.
2. The water spinach is easy to be cooked after being put into the pot, and the time should not be long, so as to retain the crisp taste of water spinach.
