Stir-fried Pentube Fish with Leek

Put the pen-tube fish into a basin, first pull out the head and clean it, and fry it with scissors. There is a transparent plastic-like thing along the inner side of the back. Pull it out, and take out the internal organs. There is a black color in the internal organs. The stuff must be taken out carefully

Remove the yellow leaves of the leeks, wash and control the moisture

Cut into 5 cm long pieces

Tips:
The leeks are relatively tender, so you don’t need to cook them for too long, just slightly soften. Don't fry the penguin fish for too long, it will be too old to bite after a long time.
