Stir-fried Pork Belly

The pork belly is first scrubbed with salt on both sides, and then boiled in a pot under cold water for 20 minutes

Prepare the seasoning.

Remove and shred.

Pour an appropriate amount of oil into the pot, add sliced ginger and green onions and saute until fragrant.

Then pour in pork belly shreds and stir fry.

Pour a little more cooking wine in a bowl, 2 tablespoons of soy sauce, and appropriate amount of pepper powder and mix thoroughly.

Then pour it into the pot, pour some rice vinegar and cook for 10 minutes, cover and simmer for 10 minutes.

At this time, shred the green and red pepper onion and set aside.

When the juice is about to be collected, poke the pork belly to the side of the pot and pour a small amount of oil.

Then add the shredded onion and saute until fragrant.

Then stir-fry the pork belly shreds on the side of the pot with onions (if the juice is too dry, you can add some cooking wine and stir-fry).

Finally add green and red pepper and stir fry.

Add salt and vegetables to taste fresh.
Tips:
1. Pork belly is not easy to be cooked, and it has a fishy smell, so first scrub the front and back with salt to clean it, and then cook it in water to remove the fishy smell.
2. After the pork belly is fried, it can be served first, or it can be moved to the side of the pot by a lazy person like me.
3. Add some rice vinegar when frying the pork belly to remove fishy, and it can also soften the pork belly and make it crisper when fried.
