Stir-fried Pork Belly with Bitter Bamboo Shoots

Fresh bitter bamboo shoots.

Open each one in two, cut into sections, and boil for a few minutes to remove oxalic acid. Then soak in clean water overnight, changing the water several times in between.

Prepare some peppers, shallots and garlic.

Sliced pork belly.

Heat the wok, pour the cut pork belly, stir up the oil over medium and small heat.

Stir the oily pork belly.

Cut the shallots into sections, and chop the peppers for later use.

Stir out the pork belly and leave some of the lard in the pot, pour the garlic and chili, and stir fry over high heat.

Add the cut bitter bamboo shoots, continue to stir-fry for a few minutes, add appropriate amount of salt, light soy sauce and oyster sauce, and season out.

Crisp, tender and delicious pork belly with bitter bamboo shoots.

Tips:
Bitter bamboo shoots must be boiled in clean water to remove oxalic acid. If you like some bitterness, you don't need to soak it for too long to retain some of the unique bitterness of bitter bamboo shoots.
