Stir-fried Pork Ears with Fresh Peppers

Clean the pig ears and cut into strips

Warm up with cold water, steam the pig ears in a steamer for 20 minutes

Remove the seeds and cut the red pepper into strips, and cut the ginger and garlic into large pieces

Put the ginger, garlic and star anise in a pot and stir fragrantly

Put the pig ears in the pot and stir fry over high heat, and pour some white wine along the side of the pot

Add some light soy sauce, dark soy sauce and salt

Finally, stir-fry the red pepper in the pan until the pepper is broken
Tips:
1. The pig ears should be thoroughly cleaned, and the ear canal should be cut with a knife to scrape clean, and then rubbed with flour and vinegar, so that there will be no peculiar smell;
2. Pork ears contain cartilage and are not suitable for direct frying. It is recommended that they be steamed or braised before frying.
