Stir-fried Pork with Mushrooms

This is a bisporus mushroom that I bought. Wash it well, cut off the dirty part of the head, and slice it into thick slices lengthwise. Don't cut the slices too thinly to avoid being too thin and unpleasant to eat after being fried. I cut 4 slices of a mushroom, I cut 3 slices for very small mushrooms.

When the tenderloin is not completely defrosted and still has a certain degree of firmness, cut it into thin slices. It is better to cut it. Cut the green onion into sections and the ginger into shreds.

Put oil in the wok, add scallion and ginger shreds and fry it until it is fragrant, then add the sliced tenderloin and stir fry until the meat is discolored.

Add the dark soy sauce and stir-fry well, if I would like to add some soy sauce to the fried meat, the sauce looks rich and appetizing, and the meat looks white and I don’t want to eat it. Soy sauce is added when sautéing the meat. The saltiness of the soy sauce will also adjust the bottom taste of the meat in advance.

The meat is now cooked for about 7 minutes, and the sliced mushrooms just cut up are added. Mushroom slices are easy to cook, just put them in and stir-fry until softened.

After the mushrooms are soft, add salt and pepper to taste, and then stir-fry them evenly. The delicious mushroom fried pork is ready.
Tips:
1. Mushrooms must not be cut too thin, otherwise they will become too thin when they are cooked and they will not taste good.
2. Don't put too many seasonings. Simply season with salt and pepper. The umami flavor of the ingredients will be delicious.
