Stir-fried Purple Yam with Green Bamboo Shoots

Wash the black fungus with water and tear it into small flowers for later use.

Lettuce leaves, peeled, washed, and cut into thin slices, garlic is peeled and sliced, and red pepper is removed, washed and cut into small pieces for use.

The purple yam is peeled, washed and cut into yams.

Tips:
Yam will oxidize and turn black when it meets iron, so blanch it with boiling water to prevent it from turning black.
