Stir-fried Raw Fish with Celery

The raw fish is fleshed, and the fillet is cut and peeled.

Put the fish fillet in a bowl, add 1g of salt, 2g of cornstarch and 5g of peanut oil, stir, add ginger juice to marinate for a while

Cut the celery into strips with a knife; remove the seeds and cut the red pepper; smash the garlic into pieces.

Boil the celery in boiling water (add 10g of salt and appropriate oil), blanch it on high heat for about a minute, pick up and set aside;

Add oil to the hot pan and fry the fish fillet smoothly. Add garlic and stir fry until fragrant. Pour in celery and red pepper and stir fry.

Finally, add the seasonings and make a thin slice of gorgon, and it will be out of the pan.
Tips:
Raw fish and fish meat requires certain skills (please see our related instructional video for details); cut the celery stalks in the same size and blanch the water for too long; the red pepper strips can be cut slightly wider; the final thickening should not be too thick .
