Stir-fried Rice Noodles with Leek

Soak the rice noodles one hour in advance, pick up and set aside

Wash the leeks and cut into sections

Put a small amount of oil in the pan, pour in the egg liquid, stir fry, scatter the eggs and put them on a plate for later use. Stir-fry the marinated meat slices and set aside

Add appropriate amount of oil to the pot, stir fry the leeks for one minute, add a little water and salt, put the rice noodles in, stir fry for one minute, add a small amount of water and simmer for two minutes with a lid, first simmer the rice noodles and cook the eggs. Pour in and stir fry. Use chopsticks to break up the rice noodles. Do not let the rice noodles form a ball. Add appropriate amount of soy sauce and stir-fry for a few minutes with a spatula and chopsticks.
Tips:
1. The stir-fried rice noodles or fried noodles must be broken up with chopsticks, otherwise they will easily form a ball.
2. You can add ham, pepper, etc. according to personal preference.
3. Stir-fried noodles with a bowl of light vegetable soup would be even better.
4. The process of fried noodles is the same as fried rice noodles.
