Stir-fried River Fresh with Spring Leek

The main materials are ready;

Slice the garlic, wash and cut the leek, cut the river prawns, wash and drain the shrimp, put it on the kitchen paper to absorb the excess water and set aside for later use;

Put oil in a pot, heat to 70% hot, pour in river prawns and stir until crispy;

Tips:
1. For river prawns, choose full-bodied prawns with thin skin and sweet meat;
2. Leeks are best to choose the roots with narrow red leaves and strong aroma.
3. The deep-fried shrimp and chives can be fried for a little while, it should not be fried for a long time, otherwise the soup will soften the shells of the shrimps.
