This dish was cooked by myself after I had eaten it in the restaurant. The taste is great, and the characteristic is that it is sour and spicy!

Stir-fried Sauerkraut Loach

1. Put the bought loach in clean water, let it spit out the dirt, add salt to scrub, rinse with clean water and drain. Wash the sauerkraut and drain the water.

2. Put vegetable oil in the pot, and when the oil is hot, dry and stir the loach over a medium-to-small heat. This step is very important. While sprinkling salt, use a shovel to keep pressing on the loach body.

3. Stir the loach until both sides are crispy and serve on a plate for later use.

4. Put a little oil in the pot, add dried chili, ginger and garlic until fragrant, then add sauerkraut, stir fry evenly with sugar.

5. Finally add the loach and stir fry out of the pot.

Tips:

1. The loach must be dry and crispy. It can be bitten with the bones to make it delicious.
2. When choosing the loach, try to choose the small one, because the big one will take a long time to fry, and the small one can be dried easily.
