Stir-fried Shredded Pork with Cowpeas

The preparation materials are shown in the figure.

Boil the cowpea in boiling water with appropriate amount of salt for 2 minutes, then remove and drain the water.

Separate the fat and lean meat into shreds, add the appropriate amount of starch to the lean meat and mix well; slice garlic and ginger; cut dried tofu into strips.

Pour the oil in a hot pan and bring it to 70% hot.

Add the fatty meat and stir-fry for about 20 seconds to stir out the fat.

Add the lean meat and stir-fry until it becomes raw.

Add the bean paste and stir fry for 10 seconds to get a fragrant flavor.

Add garlic and ginger slices and stir fry for 10 seconds.

Add the dried tofu and stir fry for 20 seconds.

Add the cowpea and stir fry for 30 seconds.
11.
Pour in some light soy sauce and stir fry for 10 seconds.
12.
Add Laoganma oil chili and stir fry for 10 seconds to turn off the heat.
