Stir-fried Shrimp with Mushroom and Winter Bamboo Shoots

Clean the white mushrooms and cut into slices.

After the winter bamboo shoots are hulled and washed, they are blanched in a pot, removed and cut into slices.

After the shrimps are cleaned, drain the water, add cooking wine, salt, white pepper and dried starch in a bowl, mix well and marinate for a while.

Raise the frying pan, add the shrimp and fry until the color changes, then serve.

Leave the bottom oil in the pot and saute the ginger slices.

Add winter bamboo shoots and mushroom slices and stir-fry evenly.

Then add some salt to taste and stir-fry again.

Then pour the oiled shrimp.

Stir evenly, add some cooking wine and stir well.

Add appropriate amount of wet starch to thicken.

Sprinkle chopped green onion before serving.

It can be out of the pot and plated.
Tips:
Winter bamboo shoots should be blanched in advance to get rid of its astringency. This dish does not require too many seasonings, and what you eat is its umami taste.
