Stir-fried Soybean Sprouts

Soak soy bean sprouts in clean water and wash them, pinch off the roots.

Pinch off the soy bean sprouts from the slender roots and stir-fry them to taste smooth and not astringent.

Cut the red pepper into small pieces, chop the shallots, and shred the ginger.

Pour an appropriate amount of oil into the pot. After the oil is hot, add the pepper, green onion, and ginger to fragrant.

Wait for the pepper, green onion, and ginger to sauté fragrant, then add the chili section and fry until fragrant.

Pour soybean sprouts into the pot.

Stir fry on low fire after high fire.

Stir-fry until the soybean sprouts change color, and then add some soy sauce after it becomes soft.

Sprinkle an appropriate amount of refined salt, stir fry over high heat, and fry until the soybean sprouts are dry, and the pan can be taken out when there is no moisture in the pan.
Tips:
1. Stir-fry the soybean sprouts until the bean sprouts are dry and the pot is best if there is no moisture in the pot.
2. Put the green onion and ginger first when frying the pan, and then add the dried chili to prevent the chili from frying and becoming bitter.
