Stir-fried String Beans with Bacon
1.
First wash the bacon with hot water, boil it in a pot, pick it up and cut it into thin slices.
Tips: The bacon is to enhance the flavor of the kidney beans, so you can leave it alone.
2.
Wash the kidney beans once, after removing the head and tail, select into small pieces, and wash again to control the moisture.
Tip: If the kidney beans have bean tendons, they should be removed together, because these places contain more toxins. Regardless of whether it is washing beans or kidney beans, we have to wash them first, and then select small pieces, so that there will be no pesticide residues.
3.
Pick up the frying pan, add the bacon and stir fry until fragrant.
4.
Add the green beans and stir-fry for a few minutes.
Tip: The oil in the pot is a little bit more than usual for cooking. After the green beans are put in the pot, cover the pot so that they will cook faster. Turn on and flip once in about 20 seconds to make the green beans evenly heated. This is the most critical step!
5.
When the skin of the kidney beans is slightly wrinkled, add salt and continue to fry.
Tip: Whether it's fried beans or green beans, don't put the salt too early, otherwise it will tasteless. This is also a key step.
6.
The green beans are all wrinkled and crumpled. You can taste it. If it doesn't have a crispy texture, you can put in the bacon, pour in the light soy sauce and stir well, and enjoy it out of the pot.
