When I was young at my grandmother's house, I often ate fried sweet potato stalks with chili. The tender sweet potato stalks, after removing the silky old skin on both ends, reveal the stalks tender enough to pinch water.

Stir-fried with chili is a delicious meal. Sometimes sweet potato stalks and leaves are added to grainy wheat grains with skins to cook into porridge. With a special fragrance.

In the southern vegetable market, when the season comes, there will be stalls selling stalks with sweet potato leaves.

It’s rare to see markets in the north, and the customs are different in the north and south, so they are rarely eaten. When I went to the Liquan countryside to pick and play before the National Day, there happened to be sweet potatoes. I didn't have much interest in sweet potatoes, but I was interested in sweet potato stalks. Others are picking sweet potatoes, but Dad Liangliang and I are picking sweet potato stalks. He wants leaves, I want stalks, haha~

When I went home and put it in a bag, I forgot it. When I remembered it, most of it was old and bad, so I quickly picked some fresh and tender ones. Only enough for such a small plate"

Stir-fried Sweet Potato Stems with Chili

1. Remove the leaves from the sweet potato stems, and tear off the silky skin on both ends. Wash and cut into sections. Shred the pepper. Shred the green onion and ginger.

2. Heat up a frying pan, add green onion and ginger and stir fry until it tastes

3. Add chili and stir fry first. (This kind of chili is too spicy. Fry it with oil first, which will reduce the spiciness. If you like spicy food, you can fry it later)

4. Add sweet potato stalks and stir fry.

5. Season to taste (1/2 tablespoon of light soy sauce, right amount of salt, right amount of chicken powder, right amount of pepper, right amount), stir-fry well.

Tips:

The sweet potato stems are hard and bitter and need to be peeled off the skins on both ends.
